Rhubarb is a plant that grows in cold climates, so it thrives in the cold, damp winter days in Yorkshire. The Rhubarb Triangle is a 23km2 triangle in West Yorkshire between the towns of Wakefield, Morley and Rothwell. It is famous for the production of 'Forced Rhubarb'. However, at one time this triangle was larger and had an area of ​​78km2 between the cities of Leeds, Bradford and Wakefield.

Rhubarb plants spend the first two years in the field, without picking stems. After being subjected to early frosts, they are moved indoors in November. The plants are kept in total darkness. The sheds used to be heated using coal from the local coal mines, but nowadays the sheds are heated by diesel fuel or electricity. Due to the heat, the plants begin to grow, and they produce stems that are softer and paler than those grown outdoors. Rhubarb is harvested between November and April. Traditionally, rhubarb is harvested by candlelight, since exposure to intense light stops the growth process.

In the 19th century, there was a special train that carried rhubarb almost daily to London in time for Christmas. At its peak, 200 tonnes was carried daily to food markets in London.A part of the harvest was even sent to Paris.

Unfortunately since then, rhubarb has become less popular. Nevertheless, a number of farmers growing rhubarb within the Rhubarb Triangle have successfully registered the name 'Yorkshire forced rhubarb' on the Protected Designation of Origin (PDO) scheme.
